This is one of our all time favorite sugar free treats. Its easy to make, absolutely scrumptious and goes perfect with that after dinner glass of vino.

Make sure the rice malt syrup has melted over the heat and combined well with the other ingredients before pouring over the berries and coconut. Fail to do so will result in your mixture splitting - still yummy but not the desired outcome. This recipe calls for 2 Tbsp of sweetener... I never use more than 1 and find it sweet enough. Play with it and see what suits your taste!
